Sweet Vegetable Bread; Huh?

If you have yet to try some flavor of Zucchini bread it may sound like an odd combo. Before these I mostly had zucchini steamed or in a stir fry so it’s natural to think of it primarily in a savory context. I can assure you though it does a great job making a sweet and delicious bread. It will make it very moist and delicious while not adding a any significant flavors that might overpower the rest. That’s always been my problem with carrot cake, but there’s no such issue here.

I’m Altering the Recipe; Pray I don’t Alter it Further

There are a couple of alterations that you can make and even one that I would actually recommend. The first of which is substituting the oil for apple sauce in equal parts. I would have made it that way, but I had just gone through all my homemade apple sauce the week before and couldn’t stomach buying any from the store. If you wanted it to be a bit breadier and not so moist, you could also squeeze out some of the excess moisture from the Zucchini before adding it to the mix. If you shred the Zucchini in larger pieces it will also make it a bit more like carrot cake in that you will get bites of the Zucchini more frequently noticeable.

Ingredients

  • 1 Cup 1 All Purpose Flour

  • 1/2 Cup 1/2 Cocoa Powder

  • 3/4 Cup 3/4 Brown Sugar

  • 1 tsp 1 baking pwoder

  • 1/2 tsp 1/2 salt

  • 1/2 Cup or 1 stick 1/2 butter

  • 1/4 Cup 1/4 Grapeseed Oil or Apple Sauce

  • 2 2 Eggs

  • 1 tsp 1 Vanilla Extract

  • 2 Cups 2 Shredded Zucchini

  • 1 Cup 1 Chocolate Chips

Directions

  • Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan. You can also line the pan with parchment paper for easy removal.
  • Mix Dry Ingredients: Mix Brown Sugar, Flour, Baking Powder, Salt and Cocoa Powder Together
  • Mix Wet Ingredients: Mix Melted Butter, Eggs, and Vanilla Together
  • Add Wet and Dry Together: Add both mixes together and fold until combined
  • Add to Pan: Pour Mix into Breadpan and place into preheated oven
  • Bake for 50 minutes or until a toothpick or knife comes out cleanly from the center
  • Let cool for 10-15 minutes on a wire rack and then eat up!

Notes

  • Apple Sauce can be used 1:1 in place of oil and even a little bit of butter
  • I love serving it with a little Greek Yogurt or Ice cream if you’re feeling extra indulgent
